- 1 1/2 c. graham cracker crumbs
- 1/3 stick butter or margarine
- 1 Tbsp. sugar
- 6 eggs, separated
- 3 (8 oz.) pkg. cream cheese
- 1 1/2 c. sugar
- 1 pt. sour cream
- 2 tsp. vanilla
Directions

1Combine first 3 ingredients and press into a buttered spring-form pan.

2Bake in 350° oven for 6 to 8 minutes.

3Remove from oven; cool slightly.

4Beat only egg yolks until bubbly.

5Add softened cream cheese and mix on low until blended.

6Add sour cream; mix well.

7Gradually add sugar and mix until dissolved.

8Add vanilla.

9In a separate bowl beat egg whites until very stiff; add to cheese mixture.

10Mix on low.

11Pour into prepared pan.

12Bake at 375° for 45 minutes, then reduce to 275° for 15 minutes.

13Cool; cover.

14Refrigerate overnight (approximately 8 hours).

15The top should be a very dark golden brown and may crack (this is normal).
