  • 1 (9-inch) prepared graham cracker crust
  • 1 1/2 lb. cream cheese (three 8 oz. bars)
  • 1 c. sugar
  • 3 eggs
  • 1 Tbsp. lemon juice
  • 1 tsp. grated lemon rind (optional)
  • 1/2 tsp. vanilla

Directions

    Beat cream cheese and sugar until light and fluffy.

    Add eggs and beat well (add one at a time, beating well after each addition).

    Blend in the lemon juice, rind and vanilla.

    Pour into chilled crust and bake at 350° for 45 minutes.

    Remove from oven and let sit at room temperature for about 30 minutes.
