- 2 eggs, lightly beaten
- 1 c. plain yogurt
- 1/4 c. melted butter, cooled
- 1 c. corn meal
- 1 tsp. salt
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1 c. grated Monterey Jack cheese
- 1 c. canned cream-style corn
- 1/2 c. minced scallions
- 1 (4 oz.) can chopped green chilies
Directions

1Preheat oven to 400°.

2Grease heavy 10-inch skillet and heat in oven.

3Whisk eggs, yogurt and butter together in medium bowl. Add dry ingredients and mix until just well blended.

4Add remaining ingredients; mix well.

5Pour into heated skillet and bake at 400° for 40 to 45 minutes.
