  • 1 c. Quick (not instant) grits
  • 4 c. water
  • 8 Tbsp. butter or oleo
  • 1 c. grated cheddar cheese
  • 2 cloves minced garlic (optional)
  • 2 eggs, beaten

Directions

    Stir grits into briskly boiling water.

    Reduce heat to simmer & cook for 3 - 4 minutes, stirring occasionally.

    When the mixture is quite thick, remove from heat and add oleo, cheese, and garlic. Preheat oven to 350°.

    When the oleo and cheese have melted and the mixture has cooled a bit, add the eggs.

    Mix well.

    Pour into a greased casserole dish and bake for about 30 minutes or until firm and golden brown.
