- 5 lbs potatoes, skinned and diced into cubes
- 1 pint mayonnaise
- 1 large onion, chopped fine
- 1 lb Velveeta cheese, melted in microwave
- 12 lb bacon, pieces fried crisp
Directions

1Cook potatoes, drain, and partially mash.

2Cook onion in bacon pan until transparent.

3Add onion to potatoes.

4Stir in mayonaise and velveeta.

5Top with bacon pieces.

6Fills a 9 by 13 pyrex dish with little room left over.

7Bake for 30 minute 350 degrees.

8Can be made a day or two in advance.

9Refrigerate, bake, and serve.
