  • 1/2 c. coarsely cut carrots
  • 1/2 c. chopped celery
  • 3/4 c. boiling water
  • 1/4 c. chopped onions
  • 1 1/2 c. cheese, shredded (any kind; Swiss, American, etc.)
  • 3 Tbsp. butter
  • 1/4 c. flour
  • 2 c. milk
  • 1 small can chicken broth

    Cook carrots and celery in boiling water until tender.

    Do not drain.

    In skillet, cook onions and butter until tender.

    Stir in flour, gradually add milk.

    Cook and stir until thick.

    Add broth, cheese, carrots and celery.

    Stir over low heat until cheese melts.
