Cheese-Spinach Appetizers

- 10 oz. frozen chopped spinach
- 1 lb. Monterey Jack cheese, cubed (with jalapenos optional)
- 1/2 c. margarine (1 stick)
- 2 eggs, beaten
- 1 c. milk
- 1 c. flour
- 1 tsp. salt
- 1 tsp. baking powder
Directions

1Thaw spinach.

2Squeeze moisture out between paper towels. Sift flour, salt and baking powder. Combine all ingredients by hand. Spread evenly into well buttered 10 x 15-inch jelly roll pan.

3Bake at 350° for 40 to 50 minutes until brown.

4Remove from oven.

5Let set a few minutes and cut into pieces.
