- 200 grams Self Raising Flour
- 1 pinch Ceyenne Pepper
- 125 grams Unsalted Butter
- 125 grams Parmessan (or vegetarian alternative)
- 2 Eggs
- 1 tsp Dijon Mustard
- 1 Sesame Seeds to sprinkle on top
Directions

1Pre-Heat an oven to 190c / 170c fan.

2Put the flour, pepper, and butter in a bowl and rub together to make breadcrumbs.

3Add the cheese and mix in.

4Crack one egg in to the bowl, then separate the other egg, placing the whites to one side and the yolk in the bowl.

5Add the mustard and mix together.

6Once the mixture binds, knead for approx.

8Wrap in clingfilm and rest in the fridge for a couple of hours.

9Roll out to approx.

100.5 - 0.75mm thickness, slice into fingers, give them a gentle twist and place on a baking tray.

11Beat the egg white and wash the fingers with it.

12Sprinkle over the sesame seeds and place in the oven for 18 - 20mins, until golden brown.

13Once cooked, remove and allow to cool.
