- 2 (8 oz.) whole chicken breasts, skinned and boned
- 4 (3 x 1-inch) slices Monterey Jack cheese
- 1 egg
- 2 tsp. Parmesan cheese
- 1 tsp. parsley
- 1/2 tsp. instant chicken bouillon granules
- 2 Tbsp. flour
- 2 Tbsp. cooking oil
Directions

1In thickest side of each chicken piece, cut a pocket large enough for cheese.

2Place a cheese slice in each pocket.

3Beat together egg, Parmesan cheese, parsley, bouillon and dash of pepper.

4Coat chicken with flour and dip in egg mixture.

5Brown in hot oil 2 to 3 minutes on each side.

6Transfer to 10 x 6 x 2-inch baking dish.

7Bake 8 to 10 minutes at 375°.
