- 8 small thin fillets of sole or flounder
- 1 tomato, peeled and chopped
- 1/2 lb. Mozzarella, grated
- pinch of thyme
- 3 Tbsp. grated Parmesan or Romano cheese
- 3 Tbsp. butter or oil
- 1/4 c. onion, minced
- 1/2 c. dry white wine
Directions

1Combine and blend well together the tomato with Mozzarella cheese, thyme and grated cheese.
