Cheese Stuffed Fillets

  • 8 small thin fillets of sole or flounder
  • 1 tomato, peeled and chopped
  • 1/2 lb. Mozzarella, grated
  • pinch of thyme
  • 3 Tbsp. grated Parmesan or Romano cheese
  • 3 Tbsp. butter or oil
  • 1/4 c. onion, minced
  • 1/2 c. dry white wine

Directions

    Combine and blend well together the tomato with Mozzarella cheese, thyme and grated cheese.

    Spread mixture on each fillet. Roll and fasten with toothpicks.
