Cheesy Corn Bread

Ingredients

  • 1 3/8 cups plain flour
  • 1 1/4 cups white bread flour
  • 5 1/4 tablespoons sweet corn canned
  • 1/2 cup polenta
  • 3 red chillies deseeded and roughly chopped
  • 2/3 cup cheddar grated
  • 2 spring onions thinly sliced
  • 2 tablespoons olive oil
  • 1 egg
  • 1 tablespoon runny honey
  • 1 teaspoon sea salt
  • 1/2 teaspoon freshly ground black pepper
  • 5/8 cup lukewarm water
  • 9/16 tablespoon active yeast
  • butter to serve

Directions

    Place all the ingredients in a large bowl and knead quickly into a smooth dough, adding a little more flour if the dough is too moist. Let stand in a warm place for 1 hour.

    Grease and flour an 8 1/2 x 4 1/2 inch loaf pan. Knead the dough again on a lightly floured work surface. Press gently into the loaf pan. Score with a sharp knife along the center. Cover and let stand for 20 mins.

    Preheat the oven to 325°F. Sprinkle the loaf generously with water and bake for 40-50 mins, until a skewer inserted into the center comes out clean. Sprinkle with water several times during baking. Remove from the oven, sprinkle again with water, cover with a tea towel and allow to cool. Serve with butter.
