- 2 lb. squash (yellow)
- salt and pepper to taste
- 1 Tbsp. butter
- 1/2 c. onion, chopped
- 4 eggs
- 3/4 c. cream-style cottage cheese
- 1/2 c. shredded Cheddar cheese
- 1/2 c. cheese crackers, crushed
- 1/4 c. chopped pecans
Directions

1Cook sliced squash in a small amount of water until tender. Drain and set aside.

2Melt 1 tablespoon butter in a large skillet; saute onion until tender.

3Remove from heat; add squash and next 3 items, mixing well.

4Spoon into lightly greased 2 quart baking dish.

5Bake at 350° for 45 minutes or until golden.

6Yields 6 servings.
