Cheesy Squash Souffle

  • 2 lb. squash (yellow)
  • salt and pepper to taste
  • 1 Tbsp. butter
  • 1/2 c. onion, chopped
  • 4 eggs
  • 3/4 c. cream-style cottage cheese
  • 1/2 c. shredded Cheddar cheese
  • 1/2 c. cheese crackers, crushed
  • 1/4 c. chopped pecans

Directions

    Cook sliced squash in a small amount of water until tender. Drain and set aside.

    Melt 1 tablespoon butter in a large skillet; saute onion until tender.

    Remove from heat; add squash and next 3 items, mixing well.

    Spoon into lightly greased 2 quart baking dish.

    Bake at 350° for 45 minutes or until golden.
