Cheesy Stuffed Squash

- 6 medium squash
- 1/2 lb. bacon
- 1 small chopped onion
- paprika
- 3/4 c. soft bread crumbs
- 1 c. (4 oz.) shredded sharp Cheddar cheese
Directions

1Wash squash and boil in salted water for 8 to 10 minutes. Drain and cool slightly.

2Remove and discard stems.

3Cut in half lengthwise and remove pulp and keep shells.

4Cook bacon in large skillet until crisp; drain well, reserving 2 tablespoons bacon drippings in skillet.

5Crumble bacon and set aside.

6Saute onion in bacon drippings until tender; stir in bacon, crumbs and pulp.

7Put mixture into shells and top with cheese.

8Broil for 5 minutes. Sprinkle with paprika.
