Cherry-Orange Salad

Ingredients

  • 1 (6 oz.) can frozen orange juice, thawed (undiluted)
  • 1 1/4 c. water
  • 1 (3 oz.) pkg. cherry jello
  • 1 (3 oz.) pkg. orange jello
  • 2 carrots, grated (optional)
  • 2 c. crushed pineapple, drained
  • 4 medium apples, grated
  • 1 c. whipping cream, whipped
  • 2 c. miniature marshmallows
  • 1 c. chopped pecans (optional)

Directions

    Combine orange juice and water in saucepan.

    Stir well and bring to a boil.

    Combine cherry and orange jello in a mixing bowl.

    Add hot orange juice mixture, stirring until gelatin dissolves.

    Set aside to cool while preparing the other ingredients.

    Stir in carrots, fruit and nuts.

    Chill until mixture is consistency of unbeaten egg white.

    Fold remaining ingredients into gelatin.

    Chill until firm.
