Cherry-Pecan-Pineapple Muffins

  • 3 c. flour
  • 3 eggs
  • 1 c. vegetable oil
  • 3 tsp. cinnamon
  • 1 c. granulated sugar
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1 tsp. baking powder
  • 1 (4 oz.) can pineapple
  • 1 jar maraschino cherries
  • 1 c. chopped pecans

Directions

    Mix flour, baking powder, salt, baking soda and cinnamon together.

    Set aside.

    In large mixing bowl, mix together eggs, sugar and vegetable oil until well blended.

    Add gradually to flour mixture until smooth.

    Next, add pineapple with juice, cherries, cut in half and chopped pecans.

    Place mixture into paper cupcake cups.

    Place pan in a 350° oven until muffins spring up in middle, approximately 30 minutes.
