Cherry-Pecan-Pineapple Muffins

- 3 c. flour
- 3 eggs
- 1 c. vegetable oil
- 3 tsp. cinnamon
- 1 c. granulated sugar
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1 tsp. baking powder
- 1 (4 oz.) can pineapple
- 1 jar maraschino cherries
- 1 c. chopped pecans
Directions

1Mix flour, baking powder, salt, baking soda and cinnamon together.

2Set aside.

3In large mixing bowl, mix together eggs, sugar and vegetable oil until well blended.

4Add gradually to flour mixture until smooth.

5Next, add pineapple with juice, cherries, cut in half and chopped pecans.

6Place mixture into paper cupcake cups.

7Place pan in a 350° oven until muffins spring up in middle, approximately 30 minutes.
