- 1 chicken, regular size or equivalent number of preferred pieces
- 1/2 c. vinegar
- 1 clove garlic
- salt to taste
- black pepper
- 1 bay leaf
- 2 c. water
- oil for frying
Directions

1Clean the chicken and cut into pieces.

2Add the salt, minced garlic and pepper to the chicken.

3Put in a kettle and add the bay leaf, vinegar and water.

4Cover and let simmer until the chicken is tender and the liquid is partially evaporated.

5(Filipinos let most of the liquid evaporate; my family prefers to save some to use as gravy with our rice.)

6Take the tender chicken pieces and stir-fry them in a little oil.
