  • 1/3 c. milk
  • 1 egg
  • 1 1/4 c. (16 oz. bag, crushed) sour cream and onion potato chips
  • 1/4 tsp. onion powder
  • 1/4 tsp. pepper
  • 1 1/2 lb. boneless and skinned chicken breasts, cut into strips or hunks
  • 2 Tbsp. butter or margarine, melted

    Preheat oven to 400°.

    In small bowl, beat together the milk and egg with fork until well mixed.

    In a shallow dish, combine the crushed potato chips, onion powder and pepper.

    Dip chicken pieces into the egg mixture, then roll them into the potato chip mixture. Arrange coated pieces in a single layer in a baking pan that has been coated with nonstick vegetable spray.

    Repeat until all the chicken is coated.

    Let sit at room temperature for 15 minutes, then drizzle with melted butter and bake for 10 to 15 minutes, until firm and golden brown.
