- 2 Tbsp. margarine or butter
- 2 Tbsp. cooking oil
- 3 lb. chicken parts
- 1 can (1 lb. 2 oz.) tomatoes
- 1 c. chicken broth
- 1 c. sliced onions
- 1/4 c. chopped parsley
- 2 tsp. salt
- 1/2 tsp. pepper
- 1 medium bay leaf
- 1 medium clove garlic
- 1 1/2 c. uncooked rice
- 1 pkg. frozen peas
Directions

1Heat margarine (or butter) and oil in Dutch oven or large heavy saucepan.

2Add chicken and brown well.

3Add tomatoes (chopped), chicken broth, onion, parsley, salt, pepper, bay leaf and garlic (minced).

4Cover and cook over low heat 25 minutes.

5Add rice and cook 10 minutes, stir occasionally.

6Add peas and cook 10 minutes longer or until done and all the liquid is absorbed.
