  • 1 broiler/fryer chicken (2 to 3 lb.), cut up
  • 1/4 to 1/3 c. flour
  • 2 Tbsp. cooking oil
  • 1 1/2 c. long grain rice
  • 1 tsp. pourtry seasoning
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1 c. milk
  • 2 1/3 c. water
  • chopped fresh parsley

Directions

    Dredge chicken pieces in flour.

    In a skillet heat oil and brown chicken on all sides.

    Combine rice, poultry, seasonings, salt, pepper, milk and water.

    Pour into a greased 13 x 9 x 2-inch baking pan.

    Top with chicken.

    Cover tightly with foil and bake at 350° for 55 minutes or until rice and chicken are tender.

    Sprinkle with parsley before serving.
