Chicken Apple Sausage

- 1 cup apple cider
- 3 ounces dried apples
- 3 1/2 lbs chicken breasts
- 4 teaspoons kosher salt
- 2 teaspoons ground black pepper
- 2 teaspoons dried sage
- 1/8 teaspoon ground cinnamon
- 1/8 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- 1 teaspoon chicken bouillon, dissolved in
- 2 tablespoons water, boiling
Directions

1In a non reactive saucepan, boil down the cider almost to a syrup(about 2-3 T.) Cool and reserve.

2Grind the dried apple or chop into small pieces.

3Grind chicken through KitchenAid grinder or food processor.

4Add the apple cider and remaining ingredient to the ground chicken in a large bowl.

5Blend thoroughly with clean hands.

6Divide the sausage into 7-8 portions(about 1/2 lb. each) place in freezer bags and freeze for later. May also stuff the sausage into casings if you desire to make 20 links.

7Use for breakfast or in salads.
