Ingredients

  • 6 chicken pieces, skinned (breast or thigh)
  • 1/4 c. oleo
  • 1 Tbsp. curry powder
  • 1/4 tsp. ginger
  • salt and pepper
  • 1 Granny Smith apple
  • 1 medium onion, chopped
  • 1/2 c. raisins
  • 2 c. cooked rice

    Melt oleo in 2-quart oblong casserole in 350° oven.

    Remove from oven.

    Stir in curry powder and ginger.

    Place 6 chicken pieces (thick side down) in pan.

    Season with salt and pepper. Top with onion, apple and raisins.

    Cover and bake at 350° for 30 minutes.

    Turn chicken and cook, uncovered, until tender.

    Remove from pan.

    Add rice to sauce in pan.

    Put chicken on top of rice. Makes 6 servings.
