- 6 chicken pieces, skinned (breast or thigh)
- 1/4 c. oleo
- 1 Tbsp. curry powder
- 1/4 tsp. ginger
- salt and pepper
- 1 Granny Smith apple
- 1 medium onion, chopped
- 1/2 c. raisins
- 2 c. cooked rice
Directions

1Melt oleo in 2-quart oblong casserole in 350° oven.

2Remove from oven.

3Stir in curry powder and ginger.

4Place 6 chicken pieces (thick side down) in pan.

5Season with salt and pepper. Top with onion, apple and raisins.

6Cover and bake at 350° for 30 minutes.

7Turn chicken and cook, uncovered, until tender.

8Remove from pan.

9Add rice to sauce in pan.

10Put chicken on top of rice. Makes 6 servings.
