  • 9 slices day-old bread, cubed
  • 3 c. chicken broth
  • 4 c. cubed cooked chicken
  • 1/2 c. uncooked instant rice
  • 1/2 c. diced pimento
  • 2 Tbsp. minced fresh parsley
  • 1 tsp. salt
  • 4 eggs, beaten

Directions

    In a large bowl, toss bread crumbs and chicken broth. Add chicken, rice, pimentos, parsley and salt. Pour into a greased 13 x 9-inch baking pan. Pour beaten eggs over all. Bake in 325° oven for 1 hour, uncovered. Let set a few minutes before cutting into squares or slices.
