- 1 chicken, cut in 6 to 8 pieces
- 2 Tbsp. olive oil
- 1 medium onion, thinly sliced
- 1 1/2 tsp. fresh rosemary, chopped
- 2 cloves garlic, sliced
- 1/3 c. white wine
- 1 1/2 c. chopped tomatoes
- salt and pepper
Directions

1Place onions and oil in pan over medium heat.

2Saute until translucent.

3Add chicken, garlic and rosemary.

4Brown.

5Season with salt and pepper.

6Add wine and simmer until reduced by half. Add tomatoes.

7Cover pan and simmer over low heat.

8Cook about 40 minutes until chicken is tender.
