  • 3 lbs. chicken pieces
  • 2 onions, minced
  • 2 Tbsp. oil
  • 2 Tbsp. flour
  • salt and pepper
  • 2 cups canned tomatoes
  • 2 small green peppers
  • 6 Tbsp. dry white wine
  • 2 bay leaves
  • 2 tsp. parsley

Directions

    Saute onion in oil until soft. Do not brown.

    Dust chicken with flour and fry in oil until brown.

    Season with salt and pepper to taste.

    Add onions, tomatoes, wine, bay leaves and parsley.

    Cover tightly and simmer until chicken is fork tender. About 1 hr.

    If necessary, baste occasionally with a little wine or chicken broth to prevent sticking.
