- 3 lbs. chicken pieces
- 2 onions, minced
- 2 Tbsp. oil
- 2 Tbsp. flour
- salt and pepper
- 2 cups canned tomatoes
- 2 small green peppers
- 6 Tbsp. dry white wine
- 2 bay leaves
- 2 tsp. parsley
Directions

1Saute onion in oil until soft. Do not brown.

2Dust chicken with flour and fry in oil until brown.

3Season with salt and pepper to taste.

4Add onions, tomatoes, wine, bay leaves and parsley.

5Cover tightly and simmer until chicken is fork tender. About 1 hr.

6If necessary, baste occasionally with a little wine or chicken broth to prevent sticking.
