  • 3 whole chicken breasts, skinned and halved
  • 1 tsp. salt
  • dash of pepper
  • 1 Tbsp. dried onion flakes
  • 1 green pepper, seeded and finely chopped
  • 1 clove garlic, finely chopped
  • 1 (15 oz.) can whole tomatoes, mashed
  • 1 (4 oz.) can sliced mushrooms, sliced and drained
  • 2 tsp. tomato paste
  • 1 bay leaf
  • 1/4 tsp. leaf thyme
  • 2 Tbsp. pimiento, finely chopped

    Wash chicken pieces well and pat dry.

    Combine remaining ingredients in crock-pot.

    Add chicken pieces, pushing down into liquid to thoroughly moisten and coat.
