Ingredients: 4 skinless chicken breast haves; 1 salt; 1 black pepper; 2 tsp olive oil; 1 medium onion, thinly sliced; 1 red bell pepper, thinly sliced; 12 oz white mushrooms, thinly sliced; 3 clove garlic; 1/2 cup dry white wine; 14 1/2 oz can whole tomatoes in juice, chopped and juice reserved; 1/2 tsp dried oregano; 1/8 tsp red pepper flakes or more to raste

rinse chicken

season with salt and pepper

heat oil in a saute pan over moderately high heat

brown chicken on both sides for about 8 minutes

remove chicken

reduce heat to moderate

add the onion and pepper.

cover and cook for 5 minutes.

stir occasionally.

add mushrooms.

cook uncovered until mushrooms begin to brown.
