Chicken Casserole

Ingredients

  • 3 lb. fryer
  • 1 medium onion, chopped
  • 1 small bell pepper, chopped
  • 1 stick margarine
  • 1 lb. cheese
  • 1 can Ro-Tel tomatoes, drained and mashed
  • 1 (8 oz.) can mushrooms, drained
  • 1 box small shells/macaroni

Directions

    Boil fryer seasoned with salt and pepper.

    Remove from bone. Reserve 1 1/2 quarts broth and boil shells in broth.

    Do not drain. Saute pepper and onions in margarine.

    To the shells, add mushrooms and cheese (cut in small pieces).

    Add tomatoes, peppers and onions.

    Stir lightly and put in large greased casserole dish. Bake 40 minutes at 350°.
