Chicken Casserole

Ingredients

  • 4 lb. chicken breasts
  • 1 box wild rice
  • 3 or 4 chopped onions
  • 2 sticks butter
  • 3 Tbsp. flour
  • salt and pepper to taste
  • 2 cans cream of mushroom soup
  • 1 c. milk
  • 1 large can mushrooms, sliced
  • 1 lb. sharp grated cheese

    Cook chicken breasts.

    Cut in chunks.

    Cook rice as directed on package (omit season packet).

    Saute onion in butter; blend in flour, soup and milk for sauce.

    Add mushrooms and seasonings.

    In large 3-quart casserole, alternate layers of sauce, rice, chicken and cheese, ending with cheese.

    Bake at 300° to 350° until bubbly.
