Chicken Corn Chowder

- 4 chicken breasts
- 6 carrots
- 1 large onion
- 1/2 c. butter
- 2 cans corn
- 1/2 lb. button mushrooms
- 1/2 lb. dried mushrooms
- 2 c. chicken broth
- 4 chicken bouillon cubes
- roux (1/2 c. flour and 1/2 c. butter)
- 2 c. Cheddar cheese
- 2 c. cream
Directions

1Cube chicken breasts and place in large soup pan with 1/2 cup butter.

2Cook with carrots (sliced thin), and chopped onion.

3Add corn (do not drain), mushrooms, chicken broth and cubes.

4Simmer 2 hours.

5Add roux, 2 cups cream and 2 cups Cheddar cheese.

6Do not boil after adding cheese.

7Serve with fresh green salad and your favorite bread to make a delicious meal.
