- 1/4 c. vegetable oil
- 1/4 c. all-purpose flour
- 1 green pepper, chopped
- 1 medium onion, chopped
- 2 c. chopped cooked chicken
- 1 (28 oz.) can tomatoes (stewed)
- 2 Tbsp. Worcestershire sauce
- 2 or 3 cloves garlic, minced
- 1 tsp. soy sauce
- 1 tsp. sugar
- 1/2 tsp. pepper
- 1/4 tsp. salt
- 3 dashes hot sauce
- hot cooked rice
Directions

1Heat vegetable oil in a heavy skillet until hot.

2Stir in 1/4 cup flour.

3Stir constantly until mixture is about the color of a copper penny, about 5 minutes.

4Reduce heat.

5Add pepper and onion; cook until tender (about 10 minutes), stirring constantly. Add chicken, tomatoes, Worcestershire sauce, parsley, garlic, soy sauce, sugar, pepper, salt and hot sauce.

6Cover and simmer about 20 minutes.

7Serve over rice.
