  • vegetable cooking spray
  • 1 c. thinly sliced onion
  • 1 c. chopped celery with leaves
  • 1 c. diced green pepper
  • 3 cloves garlic, minced
  • 2 c. sliced fresh mushrooms
  • 2 c. diced uncooked chicken
  • 1 (15 1/2 oz.) can of no-salt added tomatoes
  • 1/2 c. Chablis or other dry white wine
  • 1/4 to 1/2 tsp. crushed red pepper flakes
  • 1/4 tsp. pepper
  • 1 bay leaf
  • 2 c. hot cooked rice, cooked without salt or fat
  • 2 Tbsp. chopped parsley

Directions

    Coat a large nonstick skillet with cooking spray; place over medium-high heat until hot.

    Add onion and next 3 ingredients. Saute until crisp-tender.

    Add mushrooms and cook about 3 minutes, stirring occasionally.

    Add chicken and next 5 ingredients; cook 25 minutes.

    Serve over rice; sprinkle with parsley.
