- 4 chicken breasts, cubed
- 4 Tbsp. margarine
- 1/4 c. flour
- 1 tsp. cayenne pepper
- 3 onions, sliced
- 3 garlic cloves, minced
- 2-inch piece fresh ginger
- 2 tsp. cumin
- 2 tsp. coriander
- 1 c. plain yogurt
- 1 c. heavy cream
Directions

1Shake flour, cayenne and chicken in a bag to coat.

2Remove chicken and saute in margarine until lightly browned.

3Remove chicken.

4In same pan, add onions, garlic and grated ginger; fry until soft.

5Add cumin and coriander; fry, stirring constantly, for 2 minutes.

6Return chicken to pan; add cream and yogurt. Simmer for 30 minutes until sauce is brown and thick.

7Serve over Rice Pilau.
