  • 6 boned and skinned chicken breast halves, cut into bite size pieces
  • 2 Tbsp. olive oil
  • 1 Tbsp. margarine
  • 2 cloves garlic, minced
  • 3/4 c. chopped onion
  • 1/2 c. chopped green pepper
  • 2 tsp. curry powder
  • 1/2 tsp. thyme
  • 1/2 tsp. salt
  • 2 c. cherry tomato halves, whole tomatoes or drained canned tomatoes, chopped

Directions

    In a large skillet or wok, saute chicken in olive oil until chicken is cooked through.
