Chicken Curry Java

- 1 1/2 Tbsp. plus 1 1/2 Tbsp. peanut oil
- 4 Tbsp. tomato sauce
- 1 Tbsp. lemon juice
- 1 small onion or 2 scallions
- 1 clove garlic, minced
- 2 tsp. curry powder
- pinch of chili powder (optional)
- 1/4 tsp. black pepper
- 1/2 c. mandarin oranges and sauce
- 1/2 c. pineapple chunks and sauce
- 1 banana, peeled and sliced
- 1 Tbsp. honey
- 1 tsp. salt
- 2 c. cooked chicken, cubed
- 1 c. cooked rice (for each serving)
Directions

1Measure and prepare all ingredients and set by the stove.

2Set wok over medium heat; add oil and all ingredients (except chicken and rice).

3Mix well, cover and simmer on low for no more than 15 minutes.

4Ladle out 1 cup of the liquid and reserve for an added serving sauce.

5Make the rice in the meantime.

6Remove the mixture from the wok and set aside.

7Add more oil to the wok with a bit more curry, if desired.

8Add chicken and cook through lightly over high heat.
