- 4 boneless breasts of chicken, breaded
- 1 Tbsp. Dijon mustard
- 1/2 c. olive oil
- 1 tsp. chopped fresh tarragon
- 2 Tbsp. flour
- 1/2 lb. sliced mushrooms
- 3/4 can chicken stock
- pinch of white pepper
- 2 cloves garlic, minced
- 2 green onions, sliced
- 1 to 1 1/2 c. white wine
Directions

1Heat olive oil in saute pan over medium-high heat.

2When hot, add chicken and brown on both sides.

3Also add garlic and green onion (don't burn garlic).

4When chicken is browned, lower heat to medium and then add flour to oil in pan and mix.

5(Tilt the pan to expose oil.)

6This makes the roux.
