- 2 whole chicken breasts, split, boned and skinned
- 2 Tbsp. butter or margarine
- salt and pepper
- 2 Tbsp. lemon juice
- 1/4 c. whipping cream
- 2 tsp. Dijon mustard
Directions

1Place chicken between waxed paper and pound until 1/8-inch thick.

2Melt butter in frying pan; add chicken and cook uncovered over medium-high heat until lightly browned.

3Sprinkle with salt and pepper.

4Add lemon juice and stir gently.

5Remove chicken with slotted spoon to serving dish and keep warm.

6Return frying pan to high heat and add cream and mustard.

7Boil rapidly, uncovered, stirring until large shiny bubbles form.

8Drain any juice from chicken into sauce.

9Spoon sauce over chicken and serve with buttered noodles or rice.
