Ingredients

  • 3 cloves finely chopped garlic
  • 1 can cream of mushroom soup
  • oregano spice (one pinch)
  • 1/2 large onion or one very small
  • 1 Tbsp. margarine
  • 3/4 c. white wine
  • 3 to 4 small to medium boneless, skinless chicken breasts, cut into bite size pieces
  • 2 celery sticks, chopped
  • 1 carrot, sliced into bite size pieces

Directions

    Melt margarine in a large skillet with garlic, onion, carrots, celery and a pinch of oregano.

    Saute 10 to 15 minutes on medium-high heat until carrots and celery begin to soften.

    Add chicken and pour wine in gradually until the chicken is cooked. Stir in cream of mushroom soup and simmer 10 to 15 minutes, stirring periodically.

    Serve over pasta or rice.
