Chicken Enchiladas

- 4 chicken breasts or 1 hen
- 1 can cream of chicken soup
- 1 small carton sour cream
- 1 small pkg. hot Velveeta, grated
- 1 onion, chopped
- 10 to 15 flour tortillas
Directions

1Boil chicken, cool, debone and set aside.

2With a little oleo on both sides of tortillas, fry over medium heat until softened. Set aside.

3Saute onion in oleo.

4Add soup, most of cheese and sour cream; mix well.

5Set aside one-fourth of sauce.

6Add chicken to remainder of sauce.

7Put chicken mixture in middle of tortilla; roll.

8Place in baking pan with seam side down.

9Pour remaining sauce over tortillas.

10Sprinkle remaining grated cheese over tortillas.

11Bake at 350° for 10 to 15 minutes, or until hot.
