Chicken Enchiladas

  • 1 doz. tortillas
  • 2 pkg. (6 oz. each) sliced Monterey Jack or Muenster cheese
  • 1 small can whole green chilies, seeded and chopped (not jalapenos)
  • 1 Tbsp. chopped onion
  • 1 pt. sour cream
  • shredded, cooked chicken
  • 1 Tbsp. butter
  • pinch of salt
  • 1 c. milk

Directions

    Cut each package of cheese into 6 sections.

    Fry tortillas lightly in oil, just until limp.

    Place 1 section of cheese, along with a sprinkle of chicken, in each tortilla.

    Roll and place in baking dish.

    (This dish can be made ahead at this point and frozen.)
