- 1/2 c. sesame seed
- 1/4 c. Parmesan cheese
- 1 lb. chicken breasts, skinned, boned and sliced into 2 x 1-inch strips
- 2 tsp. olive oil
- 1 red leaf lettuce
- strips of orange rind
Directions

1In a small bowl, combine sesame seed and Parmesan cheese. Roll chicken pieces in sesame mixture.

2Heat oil in ovenproof heavy-bottomed nonstick skillet or saute pan, until just below smoking point.

3Add chicken strips and brown on both sides over medium-high heat; do not scorch.

4Place chicken strips on cookie sheet and bake in preheated 425° oven for 8 to 10 minutes or until cooked through.

5To serve, arrange chicken strips on plates with lettuce leaves and garnish with orange rind.

6Serve with honey-mustard sauce.
