  • 3 lb. chicken breasts
  • 1 egg, beaten
  • matzo meal
  • oil (for browning)
  • 1 large jar apricot preserves
  • 1/4 c. brown sugar
  • 1/2 tsp. salt
  • 1 can pineapple chunks (optional)
  • horseradish to taste

Directions

    Dip chicken parts in egg, then matzo meal and brown.

    Place on foil-lined baking sheet.

    Mix preserves, horseradish, sugar and salt and heat until bubbly.

    Pour sauce over chicken and bake in 350° oven for 1/2 hour.

    Re-baste.

    Put one pineapple chunk on each breast (optional) and bake for an additional 20 minutes.
