Chicken In Garlic Tomato Sauce

  • 8 each Chicken thighs, boneless and skinless (2 1/2 lbs)
  • 1 Oil to coat pan
  • 1 Salt and pepper to sprinkle over chicken before searing
  • 15 oz Tomatoes, Roma canned
  • 8 each Garlic cloves, halved
  • 1 cup Water or chicken stock
  • 3 each Thyme sprigs, dried, plus a little more for sprinkling

Directions

    Add oil in pan just enough to coat the bottom, sprinkle salt and pepper (optional) over chicken.

    Sear on both sides about 5 minutes until crispy and golden.

    Remove and place in oven proof dish with lid.

    Preheat oven for 425F.

    Add the garlic to the juices in the pan and simmer until golden.

    Add to chicken.

    Break apart tomatoes with your hand, and discard any remaining sauce in can.

    Add water or chicken stock.

    Add sprigs of thyme.

    And place in oven covered for 30 minutes.

    After 30 minutes, remove top and allow the juices to reduce for another 15 minutes.

    Then place on serving platter.
