Chicken In Garlic Tomato Sauce

Ingredients
- 8 each Chicken thighs, boneless and skinless (2 1/2 lbs)
- 1 Oil to coat pan
- 1 Salt and pepper to sprinkle over chicken before searing
- 15 oz Tomatoes, Roma canned
- 8 each Garlic cloves, halved
- 1 cup Water or chicken stock
- 3 each Thyme sprigs, dried, plus a little more for sprinkling
Directions

1Add oil in pan just enough to coat the bottom, sprinkle salt and pepper (optional) over chicken.

2Sear on both sides about 5 minutes until crispy and golden.

3Remove and place in oven proof dish with lid.

4Preheat oven for 425F.

5Add the garlic to the juices in the pan and simmer until golden.

6Add to chicken.

7Break apart tomatoes with your hand, and discard any remaining sauce in can.

8Add water or chicken stock.

9Add sprigs of thyme.

10And place in oven covered for 30 minutes.

11After 30 minutes, remove top and allow the juices to reduce for another 15 minutes.

12Then place on serving platter.
