- 4 chicken breasts, boned and skinned
- 3 eggs, beaten
- 1 c. dry bread crumbs
- 2 to 3 Tbsp. butter
- 1 can sliced mushrooms
- 2 Tbsp. lemon juice
- 1/3 c. dry white wine
- 2/3 c. chicken broth
- 4 slices (1/4-inch thick) Monterey Jack cheese
Directions

1Soak chicken in beaten eggs at least 3 hours.

2Drain and roll in bread crumbs.

3Brown in butter in frypan.

4Place chicken breasts in 8 x 8-inch baking dish.

5Mix mushrooms, lemon juice, wine and broth.

6Pour over chicken.

7Top chicken with cheese. Cover with foil and bake at 350° for 45 to 60 minutes.

8Serve with long grain rice cooked with green pepper and butter.
