  • 4 chicken breasts, boned and skinned
  • 3 eggs, beaten
  • 1 c. dry bread crumbs
  • 2 to 3 Tbsp. butter
  • 1 can sliced mushrooms
  • 2 Tbsp. lemon juice
  • 1/3 c. dry white wine
  • 2/3 c. chicken broth
  • 4 slices (1/4-inch thick) Monterey Jack cheese

Directions

    Soak chicken in beaten eggs at least 3 hours.

    Drain and roll in bread crumbs.

    Brown in butter in frypan.

    Place chicken breasts in 8 x 8-inch baking dish.

    Mix mushrooms, lemon juice, wine and broth.

    Pour over chicken.

    Top chicken with cheese. Cover with foil and bake at 350° for 45 to 60 minutes.

    Serve with long grain rice cooked with green pepper and butter.
