- 3 whole chicken breasts, boned, skinned and split
- 1/3 c. butter, softened
- 1/2 tsp. pepper
- 1 tsp. garlic powder
- 1/2 c. flour, seasoned with salt and pepper
- 1 egg, slightly beaten
- 2 Tbsp. water
- 1/2 c. fine bread crumbs
- oil (for deep frying)
Directions

1Combine butter, pepper and garlic; spread into rectangle on a piece of foil; freeze until firm.

2Take that butter and cut into 6 equal pieces.

3Place one piece of butter on each chicken breast; fold in end and roll to encase the butter completely.

4Secure with skewers or toothpicks.

5Beat egg with water.

6Coat chicken with seasoned flour; dip in egg mixture, then coat with bread crumbs. Place in shallow dish; chill 30 minutes.

7Deep-fry chicken breasts in hot oil about 10 minutes or until golden brown.

8Keep warm in oven at 200° while remaining chicken is cooking.

9Serve immediately.
