Chicken Lasagna

  • 8 oz. lasagna noodles, cooked and drained
  • 2 cans cream of chicken soup
  • 1/2 lb. sliced mushrooms
  • 1 bunch green onions, chopped
  • 8 oz. Mozzarella cheese, grated (save 1/2 for topping)
  • salt
  • pepper
  • paprika
  • 4 chicken breasts, cooked and diced (1/2 per person)
  • 2 soup cans half and half
  • 1 large green pepper, chopped
  • 8 oz. Ricotta cheese, mixed with 1 raw egg
  • 8 oz. Jack cheese
  • 3 to 4 Tbsp. butter

    Saute mushrooms, onions and green pepper in butter.

    Add soup and cream.

    Stir until smooth.

    Set aside.

    Butter a 13-inch oblong pan.

    Layer with half the noodles.

    Place half the chicken in the pan, top with half the cheeses and pour half the sauce over the cheeses.

    Repeat layers with other half of ingredients, ending with sauce.

    Sprinkle with saved Mozzarella and paprika.

    Bake at 350° for 30 minutes or until bubbly and lightly browned.
