Ingredients

  • 1 c. soft bread crumbs
  • 2 Tbsp. margarine
  • 1 c. milk or broth
  • 1 Tbsp. grated onion
  • 1/4 c. finely chopped celery
  • 2 eggs, slightly beaten
  • 3 c. diced cooked chicken
  • salt and pepper to taste

Directions

    Place bread crumbs and margarine in a large bowl.

    Add milk or broth that has been scalded and beaten until creamy.

    Add onions and celery.

    Add a few spoonfuls of hot mixture to eggs.
  5. 5
    Mix and combine with mixture in bowl.

    Add chicken and seasonings and pour into a greased loaf pan and bake in a 325° oven for about 45 minutes or until firm.

    Let stand a few minutes, unmold and serve hot with a gravy made of chicken broth.
