Ingredients

  • 10 chicken breasts, halves, skinned and boned
  • 1 head garlic, finely pureed
  • 1/4 c. oregano, dried
  • pinch coarse salt to taste
  • pinch pepper to taste
  • 1/2 c. red wine vinegar
  • 1/2 c. olive oil
  • 1 c. prunes, pitted, cut in halves
  • 1/2 c. capers, with a bit of juice
  • 1/2 c. green olives, pitted
  • 6 bay leaves
  • 1 c. brown sugar
  • 1 c. white wine
  • 1/4 c. Italian parsley, finely chopped

Directions

    In a large 2 gallon ziploc bag or Tupperware-type container with lid combine chicken, garlic, oregano, pepper and salt, vinegar, olive oil, prunes, olives, capers and juice, and bay leaves.

    Seal and marinate refrigerated overnight.
