Chicken Marsala

  • 4 chicken breasts, skinned, boned, halved and flattened
  • 1/4 c. flour
  • 1/2 tsp. seasoned salt
  • pepper
  • pinch of oregano
  • 2 to 3 Tbsp. olive oil
  • 1/2 c. Marsala wine
  • lemon juice
  • sliced mushrooms and almonds (optional)

Directions

    Dredge chicken in flour with salt and pepper.

    Shake in bag. Sprinkle on oregano and squeeze lemon juice over chicken.

    When browned on both sides, add lemon, wine or sherry.

    Cover.

    If breasts are flattened, cook for about 10 minutes to make sure they are done, 30 minutes for regular breasts.

    Add mushrooms and almonds last 5 minutes.

    Serve over rice.
