- 4 chicken breasts, skinned, boned, halved and flattened
- 1/4 c. flour
- 1/2 tsp. seasoned salt
- pepper
- pinch of oregano
- 2 to 3 Tbsp. olive oil
- 1/2 c. Marsala wine
- lemon juice
- sliced mushrooms and almonds (optional)
Directions

1Dredge chicken in flour with salt and pepper.

2Shake in bag. Sprinkle on oregano and squeeze lemon juice over chicken.

3When browned on both sides, add lemon, wine or sherry.

4Cover.

5If breasts are flattened, cook for about 10 minutes to make sure they are done, 30 minutes for regular breasts.

6Add mushrooms and almonds last 5 minutes.

7Serve over rice.
