- 1 1/2 lb. boneless chicken breast
- 3/4 c. milk
- 3/4 c. flour
- 1/4 c. Marsala wine
- 2 c. sauteed fresh mushrooms
- 1/2 stick margarine
- 2 Tbsp. olive oil
- 2 cloves garlic, crushed
- 2 scallions, sliced (greens too)
Directions

1Pound chicken until thin; dip in milk, then flour.

2Melt margarine and olive oil.

3Add crushed garlic.

4Saute until garlic is fragrant.

5Brown chicken on both sides.

6Add wine and mushrooms.

7Cook until done.

8May add more wine, if needed to make sauce.

9Thicken with 2 tablespoons water mixed with cornstarch (1 teaspoon).

10Add chopped scallions during last 10 minutes of cooking.

11Serve with hot fettucine noodles.
