- 4 small chicken breast, boneless/skinless
- cooking spray
- 1 1/2 cups sliced fresh mushrooms
- 2 Tablespoons sliced green onion
- 2 Tablespoons water
- 1/4 teaspoon salt
- 1/2 cup dry Marsala or dry Sherry
Directions

1Rinse chicken; pat dry with paper towels.

2Place 1 piece of chicken between two pieces of plastic wrap.

3Working from the center to edges, pound lightly with flat side of meat mallet to about 1/4 inch thickness.

4Remove plastic wrap.

5Repeat with remaining chicken.

6Spray an unheated large skillet with cooking spray.

7Preheat skillet over medium heat.

8Add chicken.

9Cook for 4-6 minutes or until tender and no longer pink, turning to brown evenly.

10Remove from skillet; keep warm.

11Add mushrooms, onion, water and salt to skillet.

12Cook over medium heat about 3 minutes or until mushrooms are tender and most of liquid has evaporated. Add Marsala or sherry.

13Heat through.

14Spoon vegetables and liquid over chicken.
